Hummus is best served with warm pita pieces, but it's also a spread and side dip to serve with fish or chicken.)
I made this using Michael Smith's recipe quite a while ago~
* 2~3 cups of canned or cooked chickpeas
* Zest and juice of 2 lemons
* 4 tbsp of tahini
* 1/4 cup of extra virgin olive oil
* 2 cloves of garlic
* Salt and pepper
Puree everything in a food processor until smooth. Taste and adjust seasoning as you like.
*Next time I'll only add juice of 1 lemon first to taste if the acidity is strong enough because this time I found the hummus to be a bit too sour. (even it was still yummy...but.... I like it less sour.)
